Vegan Pancakes

Ingredients
Dry Ingredients
1 cup blanched almond flour
½ cup arrowroot starch (or tapioca starch)
2 tablespoons coconut flour
1 tablespoon ground flaxseed
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon sea salt
1 teaspoon cinnamon (optional)
Wet Ingredients
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, let sit 5 minutes) or
¼ cup unsweetened applesauce (egg replacement)
1¼ cups unsweetened almond milk
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
1 tablespoon maple syrup
1 tablespoon avocado oil or melted coconut oil
Instructions
Prepare the egg replacement.
For the flax egg: Mix 1 tablespoon ground flaxseed with 3 tablespoons water. Let sit for 5 minutes until thickened.
Or use ¼ cup unsweetened applesauce instead.
In a large bowl, whisk together the almond flour, arrowroot starch, coconut flour, ground flaxseed, baking powder, baking soda, salt, and cinnamon.
In another bowl, whisk together the almond milk, apple cider vinegar, vanilla, maple syrup, oil, and your egg replacement.
Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 5 minutes.
Heat a nonstick skillet or griddle over medium-low heat and lightly grease with avocado oil or vegan butter.
Pour about ¼ cup batter onto the skillet for each pancake.
Cook for 2–3 minutes, or until bubbles form and the edges begin to set.
Flip and cook another 2 minutes until golden brown.
