Curry Cauliflower Coconut Soup


4 servings

1 ½ tbsp. coconut oil

1 tbsp Ginger (chopped)

1 Garlic (clove, minced)

2 tbsps. Curry Powder

1 cups Mushrooms( sliced)

1 tsp lemongrass paste

1 cup Cali (chopped into small florets)

1 ½ tbsp lemon juice( freshly squeezed)

1 ½ Canned Coconut milk

2 cups vegetable broth (low sodium)


  1. In a pot over medium-low heat, add the coconut oil, ginger and garlic.

  2. Sauté for 3 to 5 minutes. Add in the curry powder, mushrooms and lemongrass paste.

  3. Once the mushrooms are cooked through, add in the broccoli, lime juice, coconut milk and broth. Bring to a boil, reduce heat and let it simmer for 10 minutes.

  4. Add to bowls and top with cilantro. You can top with red chili flakes ( optional)
